Saving time and cutting costs of your barbecue and cooking

My barbeque setup, starter, hickory chunks, and importantly fire shield for deckBut first, how do you spell barbecue, BBQ, or barbeque? Whoops, I think the first is technically correct, it is the acronym that gets me confused.  Only occasionally do I cook, but I do barbecue quite a bit.  I have used gas grills in the past and have migrated back to a charcoal fired kettle grill, you know the classic Weber, mine at least has the ash cleanout lever, do not buy one without the cleanout, it is so much easier to use overall.  Do not do like I did and drop the kettle lid off the deck, mine is now slightly warped and only seals well in certain positions.  What can you do?

We had guests in the summer and I prepared steaks on the charcoal kettle grill with hickory chunks for smoking.  One couple loved those steaks so much they went home and switched back to charcoal, letting their gas grill mostly rust.

Notice in my photo I do use a "grill pad" deck protector; you really should protect your deck.  Not just the appearance, but there is a significant fire hazard as well.  Who knows, perhaps your insurance will not pay out after a fire caused by an unprotected deck?  Another problem for our grill site is fairly perpetual wind!  Pouring the coals out of the starter is always a "thrill".  I am glad I wear glasses, which have saved my eyes several times over.

Make any thermometer a fast read thermometer in an instant!

This is so simple once you realize you should do it.  A really good 3 second instant read thermometer is available for $90, or so, but yours can almost be as fast.  Please read My Instant Read thermometer tip.
